Is there a way to record b[ounced] messages in sentmail?

Do you immediately need a copy of the bounced message in a specific
or local mailbox? If not, adding your own email address to the list
of recipients of the bounced message might work.
Pre-filling the list of recipients with your own email address
(plus a trailing comma) could be automated using a macro doing the
typing for you, I guess. Or, if your Mutt is invoking a custom
$sendmail program, you might be able to pass an extra parameter;
and the temporary change to $sendmail around calling the <bounce>
function could be performed using a macro.
